Smoky Pecan Dip

If you’re looking for an easy to make, vegetarian snack that you can whip together in 30 minutes or less – have we got a dip for you.

This is a smoky flavored dip that goes great with veggies or as a salad or sandwich topping.

In a nutshell (hee hee), this dip is made by pureeing toasted pecans and chickpeas with some smoked hot paprika and cayenne.

Now for the how-to's.

INGREDIENTS

  • 1 cup of fresh pecan halves (use our vanilla rum or cinnamon flavored pecans for a sweet, interesting twist)
  • 3 cups chickpeas, rinsed and drained
  • 2 cloves garlic
  • 3 tablespoons fresh lemon juice
  • 1 heaping teaspoon smoked hot paprika
  • 1/8 teaspoon cayenne pepper
  • Sea salt, to taste
  • 1/4 to 1/2 cup water (filtered is best)
  • PROCEDURE

1.Preheat oven to 300 degrees F. Line a baking sheet with parchment paper and spread the pecans on the paper, toasting in the oven for 15 minutes. After removing the pecans, let them slightly cool. (you can skip this entire step by using our Fresh Roasted Pecans)

2.In a food processor, put the cooled, toasted pecans and the rest of the ingredients of the dip. Blend until smooth, intermittently stopping to scrape down the sides of the blender to help the mixture along as necessary. Alternatively, for a creamier consistency, use a Vitamix/high speed blender, which will produce a more textured dip.

3.You can add additional amounts of any of the above ingredients for a stronger taste, and blend again

Serve immediately with veggies or as a salad topping or sandwich spread.

Stores well in the refrigerator (in an airtight container)
